Thomas trained as a Sommelier with AIS and and moved to London in 2002, working at Assaggi in Notting Hill. He furthered his training as a Sommelier and was promoted to Assistant Manager at Assaggi, while the restaurant was awarded a Michelin star in 2005.
Two years were to follow at Alloro in St James’s and Harvey Nichols Fifth Floor in Knightsbridge, before he joined the internationally renowned hotel, The Ritz London, as Head Sommelier. He continued with his studies in the wine industry achieving an award to the Court of Master Sommelier as a Certified Sommelier, and as a Certified Pauillac Tester by Baron Phillipe de Rothschild in Bordeaux. A brief period followed in 2012 as General Manager at the Individual Restaurant Company with the launch and management of the company’s flagship, Piccolino’s in Heddon Street in Mayfair, before a return to his beloved fine dining. Thomas joined the Gordon Ramsay Group in July 2013 as General Manager of The Savoy Grill.
